This week, Helen cooked fried cubed pork steak, sweet potato patties, English peas, rutabagas, and cornbread. It was delicious! See how high and fluffy Helen’s cornbread rises? It’s yummy. Like cake with the sugar she adds. It is certainly different from the cornbread I am used to!

Did you ever get your mom to come over and make her cornbread for you? I'm trying to master a killer cornbread, and would love to know how she does it since you speak so highly of it.

No, not yet. I hope to soon though. I need a cast iron skillet and will get one from Wal-Mart soon. I lost my old skillets in the move to this new house.
I'd love to have a little of each, please, except the rutabagas. I never acquired a taste for those at all. I guess I should resign from the "GRITS*" club.

You're still in the GRITS club. Rutabagas is definitely an aquired taste. We probably eat them too much.
I do feel better. My shot is this Tuesday so it's nearing the countdown thus my problems yesterday. I was smiling writing about the cornbread. Maggie got a piece as well. :-)

Andrew, what are Sweet Potato Patties? I've never heard of them. Would Charlie's wife share her cornbread recipe?

Sweet potato patties are mashed sweet potatoes with eggs, butter, and sugar. They are formed into patties and then baked in the oven. I never had them either before Helen came to cook for us. I will try to get up the courage today to call Janice for her recipe. I will call dad first to see if it is okay.
I've never tried rutabaga. Does it have a bitter or sweet taste?

It has a slightly sweet and earthy taste similar to turnips. It looks a lot like a turnip before you dice it and cook it.
That looks wonderful Andrew....you eat lots of things that i haven't heard of..we dont hvave rutabaga's over here..and we dont eat corn bread (unless we call it something else)..but it looks lovely i would love the recipe as well..i do love sweet potato's...i would think it was a compliment if someone wanted any of my recipes.
I love cornbread! My Grams used to make her cornbread with sugar in it too. I loved it and miss it! I have never tried to make it myself.
